Growing up, Francie disliked doing the dishes. She figured out pretty early on that, if she helped her mom cook, she didn’t have to help clean. From this youthful pragmatism, a lifetime love of food was born.
A native of Charlotte, NC, Francie graduated from the College of Charleston. She pursued her passion for hospitality and food to the West Coast, attending the International Culinary School at The Art Institute in Vancouver, BC. While working under several of the city’s most reputable chefs, she took full advantage of Vancouver’s diverse food scene, enjoying everything from fine dining to farm-to-table to food truck fare.
From there, she traveled and worked all over the world—including stops in Sydney, Vail, and Charleston—before returning home to where it all began. While working in sales and event coordination for a local catering company, her heart led her back in the kitchen. Recognizing a void within the Charlotte market for upscale catering options, she started Francie Rudolph Custom Catering in 2016.
Francie grew up in a home where everyone had dinner together. Although her tastes have evolved a little since then, she’s never outgrown the love of gathering with family and friends over a home-cooked meal (including burger night, which she still enjoys with her parents). Creating opportunities that bring people together this way is the source of her passion and the foundation of this company.
Randolph Smith • head chef
Randolph was born in Columbia, SC, but spent most of his childhood in Charlotte. He attended Wofford College and received a B.A. in History before discovering his passion for the culinary arts. He picked up over eight years of experience in Columbia’s growing restaurant scene before moving back to Charlotte to start a new career and to be closer to his family.
Soon after returning, however, he realized that he still had an insatiable appetite for all things food. But he wanted the right opportunity to get back into the trade. In early 2018, he found it by joining Francie’s team. When he’s not in the kitchen, he’s hanging with his trusty dog, Baxter, or continuing his everlasting pursuit of the perfect round of golf.
